Payoyo cheese Mousse with orange crumbs
We made a mousse with goat cheese from our mountains and encapsulated it in a compote of red pepper simulating the shape of a tomato, we accompanied it with some crumbs flavored with San Martin Tesorillo oranges.
Sweet rice with rabbit and pumpkin with saffron
We cook the rabbit slowly and we debone it, with the result we make a silky rice to which we add a touch of almond and saffron. A unique dish that you can enjoy in our restaurant “La Condesa”.
Tartlet of chocolate and almonds
This dessert is not to be missed. We bake a traditional almond cake, fill it with a 70% chocolate ganache and top it with a crispy almond tile. Simply delicious
